This is a quick and easy recipe of gluten & dairy free White Sauce or Roux. Use it in lasagna, as a base for other sauces or as a creamy pasta sauce.
Making the sauce allergy friendly
- Gluten Free: To thicken the sauce I used cornflour but you can substitute it for gluten free flour.
- Dairy Free: The two ingredients used for dairy alternatives as follows:
- Cheese: I used vegan cheddar style shreds.
- Milk: I used coconut milk and you can use your choice of dairy free alternative milk
Thickening the Gluten & Dairy Free White Sauce
I used corn starch to thicken the sauce but corn starch does not give body to the sauce as a flour would do. Also a lot of people are allergic to corn so you can use gluten free all purpose flour but bear in mind that it might not thicken the sauce as corn starch will do. It can still be a little watery.
What flavor of dairy free cheese to use
I have used cheddar cheese because my kids like cheddar more than any other flavor but you can use any flavor you like, for example, mozzarella.
Seasoning the Gluten & Dairy Free White Sauce
Apart from the basic salt and pepper, you can also use other spices such as chili powder, to make it spicy. Also use your favourite herbs.
Storing the Gluten & Dairy Free White Sauce
You can store the sauce in airtight container for one week. You can also freeze the sauce and just reheat as needed.
How do you reheat the gluten and dairy free sauce?
You can reheat the sauce in the microwave or on the stove. To heat in the microwave, place the sauce in a microwave safe dish and heat for 2 minutes until warmed through. To heat in the stove, bring the sauce to a boil and simmer for about 5 minutes.

Ingredients
2 tablespoons dairy free butter
1 tablespoon corn flour/gluten free all purpose flour
2 cups dairy free milk
1 cup water
1 bay leaf
1/4 tsp nutmeg powder
salt & pepper, to taste
1/2 cup dairy free cheese shreds
Steps
- Heat 2 tablespoons dairy free butter on medium heat.

- Once the butter has melted, add gluten free flour, if using, cook until it starts bubbling (for corn starch see notes below)

- Pour dairy free milk and add a bay leaf then let it come to a boil

- Once the sauce becomes thick, add nutmeg and seasoning to your taste.

- Now add the dairy free cheese and stir to mix. Sauce is ready to be used.
