It’s the season of mangoes and that is why you are seeing lots of recipes with mangos on here. It is also summer and what’s the best treat for summer – ice cream and not just any ice cream South Asian version of it – Dairyfree and NutFree Mango Kulfi.
The recipe is made with milk, cardamom, and nuts but since we are free from so many ingredients, my version of kulfi is dairy, nut, and gluten free.
How to make the Dairyfree and Nutfree Mango Kulfi
There are two ways to make Dairyfree and Nutfree Mango Kulfi, the first one is, boiling the milk first then adding the rest of the ingredients. While in the second there is no cooking involved you just blend all the ingredients together. Even though the second method is easier, in the recipe, I have used the first method.
Making the Dairy Free Mango Kulfi
The three dairy free ingredients that I used instead of the regular dairy products are:
- Dairy free milk
- Dairy free condensed milk
- Dairy free cream – used to blend the mangos into a puree. I did not use water as dairy free products are already very watery instead I used dairy free cream to blend the mangoes.
Nut Free
The basic recipe uses pistachios or almonds but for this nut free version, I left out the nuts.
Gluten Free Dairyfree and NutFree Mango Kulfi
Some recipes use breadcrumbs to make the kulfi, I have used breadcrumbs too, but gluten free ones. If you cannot find breadcrumbs, you can make your own by grinding a slice of gluten free bread in a coffee grinder.
Flavour Variations for Dairyfree and NutFree Mango Kulfi
Mango can be replaced by any other fruit or nuts if nuts are safe for you or it can be just plain Kulfi.
