These allergyfriendly rainbow cupcake cones are very easy to make. They are gluten free, dairy free, and egg free. o more people can enjoy them without worry. I first came across this idea when my daughter was watching videos on YouTube. She enjoys recipes that are fun and a little different. As soon as she saw these cupcake cones, she got excited and showed them to me. Then, she insisted that we try making them at home. Because of our dietary needs, I decided to adapt the recipe and make it allergy friendly.
The method is simple and very similar to making regular cupcakes. However, instead of using cupcake liners, I pour the batter directly into ice cream cones. Then, I place the cones upright and bake them in the oven. As a result, the cupcakes come out looking like colorful ice cream treats. For this recipe, I use gluten free ice cream cones. You can usually find them in the organic or specialty section of most grocery stores in North America.
I will be honest here. I am not a very confident baker. In fact, many of my baking attempts do not turn out as planned. This happens more often when I try to adjust recipes to fit our allergy friendly lifestyle. It becomes even more challenging when I bake desserts. Because of this, I often avoid baking from scratch. Instead, I choose baking mixes since they are quick, simple, and more reliable.
For these cupcake cones, I used a gluten free baking mix. This made the process much easier and less stressful. As a result, the recipe becomes beginner friendly and more manageable. However, you can still use your own favourite recipe or a white or golden cake mix if you prefer.
Batter Colour for Allergyfriendly Rainbow Cupcake Cones
To colour the batter, I use four different food colours. This amount works well and gives me enough batter to make about 10 cones. In addition, it keeps the process simple and less overwhelming. However, if you decide to use more than four colours, you will likely need extra batter to maintain the same quantity.

Ingredients
1 pack gluten free cake mix
a few drops assorted food colors of choice
10 gluten free ice cream cones
muffin baking tray
Steps
- Preheat the oven to 350o F. Meanwhile, prepare the cake batter according to instructions or use your own recipe.
- Divide the batter into four bowls. Add a few drops of any food colors you like, a different color in each bowl, and mix.


- Take a muffin tray and put a cone in each muffin holder.
- Now take a colored batter and fill each of the cones with a teaspoon of the batter. Repeat with each color until all the cones are filled.

- Bake for 35 to 40 minutes until the toothpick when inserted into the center comes out clean.
