Dairyfree Malai Handi Kebab

DairyFree Malai Handi Kebab is a scrumptious, creamy, and very flavorful kebab that is super easy and quick to make. Serve it with naan, homemade gluten free tortillas or rice and you have a full meal.

What does Dairyfree Malai Handi Kebab means?

  • Malai kebabs mean creamy kebabs.
  • Handi means cooked in a special pot with sauce.
  • As the recipe has dairy so I made it dairy free by using dairy free alternatives.

Meat Variations

I like to use mince meat in these kebabs and shape them like a croquette. Here I have used chicken mince but beef or lamb mince can be used as well. You can also use vegan mince meat alternatives too for a vegan version.

Dairy Free Sauce

This recipe uses ingredients like cream cheese, shredded cheese, butter, etc., so I needed to substitute these ingredients with their dairy free versions:

  • Unflavored cream cheese
  • Butter
  • Cheddar cheese shreds: I only used cheddar flavor but you can use a mixture of both mozerella and cheddar, 1/2 cup each.
  • Cream: the recipe also uses dairy free milk but since the milk is thinner than the cream so I just increased the quantity of cream to make it more thicker.

Gluten Free Kebabs

Traditionally the kebabs use bread soaked in milk to give it structure and hold it together. Here I used gluten free bread crumbs. You can also use gluten free bread soaked in dairy free milk but for me this was easier.

Cooking the Dairyfree Malai Handi Kebabs

You have three options to cook the kebabs

  • Grill them for a more authentic flavor
  • Bake them if you do not have a grill
  • Fry/Air fry them as I have done in the recipe: as I do not have a grill and anything fried just tastes better.

Storing the Dairyfree Malai Handi Kebabs

If you have leftovers, they can be refrigerated for up to 2 days or you can freeze them in a freezer-safe container for up to a month, just reheat them, when needed.

Ingredients

  • Kebab
  • 1 lb chicken mince

  • 1 tablespoon crushed garlic

  • ½ cup, onion

  • 1 teaspoon crushed red pepper

  • 1/2 teaspoon salt

  • 1 teaspoon garlic powder

  • 8 green chilies

  • 2 tablespoons gluten free bread crumbs

  • 1/4 cup dairy free cream

  • 1 cup dairy free cheese

  • 1 teaspoon cumin

  • 3 tablespoons chopped coriander leaves

  • Sauce
  • 1-1/2 cup dairy free cream

  • 1/2 cup dairy free milk

  • 3 tablespoons dairy free cheese

  • 1/2 cup oil

  • 4 green chilies

  • 1 tablespoon ginger garlic paste

  • 1 teaspoon crushed red pepper

  • 1 teaspoon black pepper

  • 1-1/2 teaspoon crushed coriander powder

  • 1 teaspoon cumin

  • 1 teaspoon garam masala (all spice)

  • 1 teaspoon salt

  • 1/2 teaspoon cardamom powder

  • 1/4 teaspoon mace ground

  • 1/4 teaspoon nutmeg, grinded

  • 1 teaspoon dried fenugreek

  • 1 capsicum, cubed

  • 1 onion, cubed

  • 2 tablespoons dairy free butter

  • 2 tablespoons coriander leaves, chopped

  • 4 tablespoons dairy free cream cheese

Steps

  • Place all the ingredients for kebab in food processor and chop.
  • Grease hands with oil, shape into crocket size kebabs then bake or fry. Set aside.frying the dairy free malai kebabs

  • Heat oil in a wok, add butter, chopped green chilies, ginger garlic paste, add capsicum, onion, fry for 5 mins.
  • Then add in cream, milk, cream cheese, cheddar cheese and all the dry spices.cooking the malai handi sauce
  • Now add fried kebabs, cover and simmer for 2 minscooking the gluten free kebab in the sauce
  • Garnish with coriander, serve with gluten free tortilla or breadtopping with chopped corriander leaves

  • Use a mixture of dairy free mozzarella and chedder shreds
  • Do not use dairy free milk will make the sauce thin
