An Allergy friendly spin on a simple classic making it Gluten Free, Dairy Free, and Egg Free Macaroni and Cheese.
Dairy Free Sauce
For the white sauce, I made dairy free white sauce at home or just used dairy free cheese. To make the sauce, I use dairy free milk and dairy free cheese. The flavour I used was the cheddar flavour but you can use whichever flavor you like.
Dairy Free Butter
I love the creamy rich base that dairy free butter gives to this allergy friendly mac and cheese recipe. The butter is used to make the sauce.
Dairy Free Milk
I used unsweetened coconut milk to make my mac and cheese but you can use any kind of rich and creamy plant milk you like. Oat or soy all work well. Make sure you buy an unsweetened variety so the cheese sauce doesn’t turn out sweet.
Baked or Stove Top Allergy Friendly Macaroni and Cheese
This recipe can be used to make stovetop mac and cheese or can also serve as a quick substitute for baked mac and cheese.
Because sometimes, you are just not that patient and do not want to wait the 30 minutes it takes to bake that mac and cheese in the oven, It doesn’t matter how good the results are. Sometimes, you are just too hungry and want food as soon as possible.
Toppings for Allergy Friendly Macaroni and Cheese
I usually just go with a cheese layer on top, since it gets nice and crispy, but you can also toss 1 cup of gluten free breadcrumbs with 2 tablespoons of melted dairy free butter and use that as a topping.
Storing the Allergy Friendly Macaroni and Cheese leftovers
Any leftovers should be covered tightly and refrigerated for 3-4 days.
To reheat, stir in a little bit of your favourite dairy free milk or cream and microwave partially covered with plastic wrap. Stir often as it reheats.
