How to make this sauce egg free?
I have seen a lot of toum recipes use eggs to make it fluffy. I have also seen recipes not using the egg at all but those recipes take a little bit of work to get the right texture for the sauce. So there are three ways you can go egg free with this sauce:
- You can use an egg replacer
- Do not use any egg but you will have to be patient and drizzle the oil very slowly to get the right texture and to be honest I never get it right with this method.
- The third method is to use a boiled potato!
Yes, in this recipe, I use a boiled potato! It gives the same results.
Making the Sauce Less Bitter
If you find the garlic sauces to be bitter, a trick to make it milder is to cut the garlic in half and remove the green vein running in the center. Adding the potato will also help.

Ingredients
6 cloves garlic
salt, to taste
1 small potato
1 tablespoon lemon juice
1 tablespoon neutral oil
Steps
- Boil, peel, and cube the potato
- Peel and cut the garlic in half vertically. Remove the green vein in the middle.
- Add all the ingredients in a blender to blend
- Adjust oil as needed and salt to taste, enjoy
